It's hard to know what trowel without seeing the mosaics. I have a 1/8" x 1/8" U notch that works nicely for some mosaics, also a worn out 1/4" x 1/4" U notch, as well as a small V notch that is probably 3/16" x 1/4". The best answer is to use whatever trowel will give good coverage with a lot of ooze through the joints that you have to fight with later.
We also use a soft, worn out grout float for seating or bedding the mosaics in the thinset...this is easier than trying to push individual tiles with your fingers.
